Memorial Day Weekend will be here before we know it. This year, instead of the usual Burgers and Hot Dogs, try something new for your backyard cookout. Tacos are easy to prepare on a grill. Marinate some fish, shrimp, and/or chicken, slice it, and pop it onto grilled corn or flour tortillas. Add your favorite toppings and you have a perfect hand-held meal. Round out your cookout with rice and beans and this cool refreshing salad.

Mango Avocado Salad

Ingredients: 

2 Large Avocado’s Peeled & Cubed 1/2 Cup Vegetable Oil
1 Cup Mango Peeled & Cubed 3 T. Fresh Lime Juice
1 Cup Pineapple Peeled & Cubed 3 T. Fresh Orange Juice
1 Cup Jicama Peeled & Cubed Zest from one Lime
1/2 Cup Radishes Slices 1/2 tsp. Salt
1/2 Cup Green Onion Sliced 1/2 tsp. Pepper
2 T. Cilantro, Chopped

Directions:

Combine Oil, Lime Juice, Orange Juice, Zest, Salt & Pepper in a large bowl. Whisk well. Add remaining ingredients and toss gently.  Enjoy!
